Ah! Furmity is a bit more complicated, I think.
It's a very general term to cover a dish made of wheat boiled in water with
all sorts of other things added, depending on local custom - Hardy says
'flour, milk, raisins, currants, and what
Not'
The whole point of its appearance in 'The Mayor' is, I think, that the stall
holder kept a supply of rum under the counter for customers who asked for
it, so an innocent, nutritious dish could be turned into something a lot
less innocent. This was Henchard's undoing, of course.
